Process: It all begins with pomegranate picking, choose half sour half sweet pomegranates for the best taste. Tear the pomegranate apart into different sections. Remove the arils by prying them loose from the rind. Blend to get pomegranate juice, then strain to remove all undesired texture. The juice will be now ready for cooking. Boil juice for hours till you get pure pomegranate molasses.
Boiling: This molasses is produced by boiling pomegranate juice in a large pot for hours with stirring till the water evaporates and pure molasses is created.
Final Gem: This famed mix has for ages been used as a replacement for citrus juices when added to foods or salads. In Lebanon it is used in many recipes and salads.
